1. What is citrus pectin?
Citrus Pectin is a polysaccharide compound extracted from peels of citrus fruits, such as lemon, orange and grapefruit. It is long-chain carbohydrate with molecular weight of 50-300 thousands Da, degree of esterification is 20-75%.
